Brussels Sprouts Slaw (Whole30 Approved)

I came up with this brussels sprouts slaw last summer when I was doing Whole30. It is so delicious and so creamy, you would think it’s a traditional slaw made with mayonnaise…but it’s far from it. This would be a perfect side dish if you’re grilling out, or even better yet add it to your weekly meal rotation!

Brussels Sprouts Slaw (Whole30 Approved)

prep time: 20 minutes        cook time: 30-35 minutes         total time: 50-55 minutes

INGREDIENTS:

  • 1 bag of Brussels Sprouts
  • 2 cups shredded cabbage
  • 1/4 cup avocado oil plus 1 tablespoon
  • 1 medium ripe avocado, chopped
  • Juice of 1 lemon
  • 3 garlic cloves, minced
  • Sea salt & black pepper for seasoning
  • Roasted cherry tomatoes (optional)
  • Cooked Whole30 compliant bacon (optional)

INSTRUCTIONS:

  1. Cut brussels sprouts in half and place on a baking sheet lined with parchment paper.
  2. Add minced garlic and drizzle one tablespoon of avocado and sprinkle of sea salt and black pepper onto the baking sheet. Toss together with hands or spoon.
  3. Bake at 350F for 30-35 minutes until crispy. Remove from oven and allow to cool for 15 minutes.
  4. Using a food processor or blender, add avocado, 1/4 cup avocado oil, juice of a lemon, and sea salt and pepper as desired. Blend or food process until smooth.
  5. In a large bowl, add roasted brussels sprouts, shredded cabbage, and avocado mixture. Mix well until the brussels sprouts and cabbage are completed covered.
  6. Transfer to a serving bowl or dish and garnish with roasted cherry tomatoes or Whole30 compliant cooked pork bacon (optional).
  7. Serve immediately or place in the refrigerator to cool a little longer. Store leftovers in the refrigerator in an airtight container for 1-2 days.
